Calabrian Prawn and Chorizo Pasta

Preparation

Spaghetti
Onion (Red)Peeled and finely chopped
Spreadable ChorizoSkin removed and roughly chopped
Garlic ClovesPeel and chop or slice finely
Raw Tiger PrawnsLeave in the fridge to defrost until using
Tomato (Cherry)Cut each in half
ParsleyFinely chopped

Method

As individual cuts may vary in shape/size, please check that they are cooked and seasoned to your liking, ahead of serving.

Step 1 15 mins Bring a large saucepan of water to the boil and cook the pasta according to the packet instructions.
Step 2 Meanwhile, heat a heavy based fry pan with 2 tablespoons of cooking oil and bring to a medium-high heat.
Step 3 6 mins Add the red onion and cook for 1 minute before adding the chopped chorizo and garlic. Cook for 4-5 minutes or until becoming crisp.
Step 4 3 mins Add the prawns and cook for a further 2-3 minutes.
Step 5 2 mins Add the tomatoes and allow to soften for 1-2 minutes before adding in the parsley. Taste and add seasoning as required.
Step 6 2 mins Drain the pasta and add to the fry pan mixing all through well. Serve whilst hot.
