Cheats Chicken and Mushroom Pie
Serves 4 people

You may notice that there are a few surplus ingredients provided, due to the number of people you have ordered for. You can choose to add these surplus ingredients to your recipe now, or save them for another meal.

Method
As individual cuts may vary in shape/size, please check that they are cooked and seasoned to your liking, ahead of serving.
Step 1 | Preheat oven to 180C. |

Step 2 15 mins | In a large fry pan heat a little cooking oil and cook the onion till softened (2-3 mins). Add the chicken thighs and brown well. Add the sliced mushrooms and allow to cook down for 2-3 mins before adding the chicken stock and fresh thyme. |
Step 3 12 mins | Reduce the heat and cook gently for 10 mins. Taste and add salt and pepper to your liking. |
Step 4 3 mins | Mix the cornflour in a small bowl or cup with just enough water to make a slurry. |
Step 5 2 mins | Pour the cornflour mix into the chicken and mix well. Remove from the heat. |
Step 6 | Unroll the pastry and ensure that it will cover the deep baking dish you will be using. |
Step 7 3 mins | Transfer the chicken and mushroom mix into the deep baking dish. |
Step 8 5 mins | Lay the pastry over the top and carefully cut away any excess pastry draping down the sides before gently easing the sides of the pastry and crimping it to the edge of the baking dish. |
Step 9 3 mins | Mix the egg with the milk and beat well. Using a pastry brush or your fingers brush the egg and milk wash over the pastry taking extra care of the edges so they are well covered. |
Step 10 35 mins | Place in the preheated oven and cook for 35 mins or until the pastry is golden brown and bubbling at edges. |
