Chorizo, Tomato and Beans with Baked Eggs
Serves 4 people

You may notice that there are a few surplus ingredients provided, due to the number of people you have ordered for. You can choose to add these surplus ingredients to your recipe now, or save them for another meal.

Sausage (Spicy Chorizo) | Slice thinly |
Beans (Cannellini) | Drain and rinse the beans |
Eggs (Free Range) | Use 1 egg per person |
Tomato (Chopped) | |
Tomato (Cherry) | |
Onion (Red) | Use half the onion. Peel and finely chop |
Garlic Cloves | Peel and chop or slice finely |
Coriander | Roughly chop. Reserve a sprinkle for garnish |
Parsley | Roughly chop. Reserve a sprinkle for garnish |
Red Capsicum | Halve vertically and core. Slice each half lengthways again into 6 strips |

Method
As individual cuts may vary in shape/size, please check that they are cooked and seasoned to your liking, ahead of serving.
Step 1 3 mins | Heat a large non-stick fry pan to a medium heat. Add a splash of olive oil, then the onions and saute gently until soft. |

Step 2 7 mins | After 5 minutes, add the spice mix, garlic, chorizo and capsicum. Stir gently for another 2 minutes. |
Step 3 10 mins | Add the beans and both the fresh and tinned tomatoes to the pan. Also add half of the coriander and half of the parsley. Gently simmer for about 10 minutes until the tomatoes and capsicum have softened. |
Step 4 8 mins | Make wells in the mix and crack an egg into each gap (you can also transfer the mix into separate pans for each person and do this). Season and cover with a lid. Cook gently for 5-6 minutes, or until the eggs have just set on top. |
Step 5 3 mins | Meanwhile, slice and toast your ciabatta. |
Step 6 | To serve - Place small teaspoons of creme fraiche around the eggs and sprinkle with the remaining fresh herbs, Serve with toasted ciabatta on the side. |
