Step 1 Preheat oven to 180C
Step 2 20 mins Place the diced potatoes in a large saucepan and cover with water. Cook until soft then drain and set aside.
Step 3 3 mins In a frypan or heavy based pot, heat a little cooking oil and cook the carrot and onion until softened, 2-3 minutes.
Step 4 20 mins Add the beef mince and break apart with a fork. Add the beef stock and mix well. Cook uncovered on a medium heat until the excess liquid has evaporated and you have a nice thick consistency, 15-20 minutes.
Step 5 Add in the peas and stir well then tip into a baking dish.
Step 6 5 mins In a large bowl mash the potato adding in the parsley, 2 tablespoons of butter and milk as you mash to create a smooth mash. Season with salt and pepper to taste.
Step 7 5 mins Layer half the mozzarella on top of the beef mixture, mix the remaining through the potato mash and then layer the mash over the beef mixture.
Step 8 Cook in the preheated oven for 15 minutes or until bubbling and golden brown.
