Cottage Pie with Mozzarella Potato Top

Frozen Peas | Defrost in the fridge. |
Parsley | Finely chop |
Mozzarella | Dice the mozzarella |
Method
As individual cuts may vary in shape/size, please check that they are cooked and seasoned to your liking, ahead of serving.
Step 1 | Preheat oven to 180C |

Step 2 20 mins | Place the diced potatoes in a large saucepan and cover with water. Cook until soft then drain and set aside. |
Step 3 3 mins | In a frypan or heavy based pot, heat a little cooking oil and cook the carrot and onion until softened, 2-3 minutes. |
Step 4 20 mins | Add the beef mince and break apart with a fork. Add the beef stock and mix well. Cook uncovered on a medium heat until the excess liquid has evaporated and you have a nice thick consistency, 15-20 minutes. |
Step 5 | Add in the peas and stir well then tip into a baking dish. |
Step 6 5 mins | In a large bowl mash the potato adding in the parsley, 2 tablespoons of butter and milk as you mash to create a smooth mash. Season with salt and pepper to taste. |
Step 7 5 mins | Layer half the mozzarella on top of the beef mixture, mix the remaining through the potato mash and then layer the mash over the beef mixture. |
Step 8 | Cook in the preheated oven for 15 minutes or until bubbling and golden brown. |
