Eggs Benedict with Bacon
Serves 4 people

You may notice that there are a few surplus ingredients provided, due to the number of people you have ordered for. You can choose to add these surplus ingredients to your recipe now, or save them for another meal.

Vine Tomatoes | Separate the tomatoes from the vine. Leave a little stem on if you like |
Method
As individual cuts may vary in shape/size, please check that they are cooked and seasoned to your liking, ahead of serving.
Step 1 | Preheat the oven to 200C. |

Step 2 | Choose a pan big enough to fit your eggs. Fill 3/4 full with water and bring to a simmer. |
Step 3 10 mins | Lay the bacon on a roasting tray. In a separate dish, place the tomatoes and drizzle with a little olive oil and season with salt and pepper. Place both trays in the oven and roast for 10 minutes or until the bacon is cooked to your liking and the tomatoes are cooked. Remove from oven and set aside. |
Step 4 5 mins | Next toast or grill the muffins. If you are grilling them you can butter first so they are browner. |
Step 5 2 mins | To cook the eggs, add a teaspoon of white vinegar to the poaching water, as this will help the eggs to set and keep their shape. |
Step 6 5 mins | When the water is simmering, carefully break the eggs into a cup, then lower gently into the water, one at a time. Use a slotted spoon to gently ease the egg off the bottom of the pot without breaking it. For a soft poached egg it should take 90 seconds to 2 minutes. If you like your yolks firmer, cook them for 30 to 40 seconds longer. Use the slotted spoon to remove eggs from the water, then drain on kitchen paper. |
Step 7 3 mins | Place the hollandaise in a pot and heat gently, being careful not to overheat as it may separate |
Step 8 | To serve - Lay the bacon across the toasted muffin. Place the poached eggs on top and spoon over the hollandaise and crack some fresh pepper over the top. Serve the roasted tomatoes to one side. |
