Ray’s Chicken Tostados

Serves 2 people

Preparation

Ingredient Preparation
Chicken Breast
Onions (Brown)Peel and finely chop
Garlic ClovesPeel and chop or slice finely
Green ChilliSlice thinly.
Bay Leaves
Beans (Red Kidney)Drain well
Tomato (Chopped)Use 1/2 a cup of the tomatoes.
Corn Tortillas
Lettuce (Cos)Thinly sliced.
Tomato (Cherry)Slice the cherry tomatoes in half.
AvocadoSlice the avocado in half. Remove the stone and peel away the skin. Cut the flesh into slices. Use half the avocado.
Sour Cream
LimesCut into wedges for serving.
Paprika (Smoked)

Method

As individual cuts may vary in shape/size, please check that they are cooked and seasoned to your liking, ahead of serving.

Step 1 30 mins Put the chicken in a saucepan and cover well with water. Place on the heat and bring to the boil. Simmer for 30 minutes, then remove from the heat, drain, cool and slice thinly across the grain of the meat. Reserve the chicken.
Step 2 10 mins Heat the olive oil in a medium sized frying pan over a moderate heat. Add the onion, garlic, chilli and bay leaf. Fry gently for 10 minutes or until the onion is golden and soft.
Step 3 10 mins Add the beans and stir-fry for 3-4 minutes. Add the tomatoes, mix well and simmer for 5 minutes. Remove from the heat, discard the bay leaf, mash the bean mixture coarsely and season with salt and pepper to your taste.
Step 4 3 mins Heat about 1cm deep layer of your cooking oil in a clean frying pan and fry the tortillas, one by one until browned on both side. Remove from the pan and drain on paper towels.
Step 5 5 mins Put the tortillas side by side on a clean surface and spread a quarter of the warm bean mixture on each. Next place a quarter of the chicken on top of each tortilla, then a quarter of the lettuce, then a quarter of the beans, then a quarter of the tomatoes, avocado and sour cream.
Step 6 Sprinkle the tortillas with a little paprika and serve with a hot sauce and with lime wedges for squeezing.
