Ray’s Feta and Courgette Tart
Serves 6 people

Flour Standard | This is for rolling, so use as required. |
Onions (Brown) | Peel and finely chop |
Lemons | Zest the lemon and set aside. |

Garlic Cloves | Peel and chop or slice finely |
Courgette | Thinly slice the courgette, blanch for 3 minutes in a saucepan of boiling water, drain really well and cool. |
Cream | Use 100ml for this recipe |
Eggs (Free Range) | Use 4 eggs and beat well. |
Classic Feta Cheese | Crumbled. |
Method
As individual cuts may vary in shape/size, please check that they are cooked and seasoned to your liking, ahead of serving.
Step 1 | Preheat the oven to 200C. |

Step 2 20 mins | Roll out the pastry on a floured surface so that it is big enough to line a greased 28cm diameter tart tin. Cover with foil and weight the foil with baking beans or raw rice. Place in the oven for 10-15 minutes until the edges are browning. Remove the foil and return to the oven for a further 5 minutes. Remove from the oven and reserve. |
Step 3 | Lower the oven to 180C. |
Step 4 10 mins | While you are blind baking the pastry shell, heat 3 tablespoons of oil over a moderate heat in a frying pan and add the onion, lemon zest, thyme and garlic. Fry for about 10 minutes or until the onion is soft. |
Step 5 2 mins | Remove from the heat and cool the onions. Once cooked, place the onion and all of the remaining ingredients in a mixing bowl and mix gently but thoroughly. |
Step 6 40 mins | Pour the mixture into the cooled tart shell. Spread everything out in the shell so that it is evenly distributed. Place in the oven and cook for 40 minutes or until well set and puffing up. |
Step 7 | Remove the tart from the oven and serve in wedges with a side salad or whatever you have arranged to go along with the tart. |
