Ray’s Grilled Marinated Fish with Stir-fried Bean Sprouts and Broccoli

Lemon Juice | |
Coriander | Set aside enough coriander for serving. With the rest of the coriander, finely slice the stalks and leaves together, this should make about 2 tablespoons of finely sliced coriander. |
Chilli red | Remove stem and thinly slice. |
Garlic Cloves | Peel and finely chop |
Ground Turmeric | |
Tarakihi (Fillet) | Cut the fillets into 8 cm pieces. |
Mung Bean Sprouts | |
Broccolini | Halve the stems, boil for 2 minutes in a saucepan of water, and drain well. |
Ginger | Peel the ginger and finely slice |
Sauce (Soy) | |
Oyster Sauce | |
Lemons | Cut into wedges for serving |
Method
As individual cuts may vary in shape/size, please check that they are cooked and seasoned to your liking, ahead of serving.
Step 1 3 mins | Put the lemon juice, 2 tablespoons of oil, 1/2 teaspoon of salt, chopped coriander, chilli, 1/3 of the garlic and the turmeric into a small bowl and mix well. This is the marinade. |

Step 2 2 mins | Place the fish in a large bowl and add the marinade. Turn the fish over several times so the marinade is equally distributed. |
Step 3 8 mins | Heat a ridged grill pan or frying pan over moderate heat and place the pieces of fish onto the pan, side by side. Fry gently for about 4 minutes on each side, depending on the thickness of the fish, until just cooked through. |
Step 4 5 mins | While the fish is cooking, heat a wok over high heat and add the remaining garlic, the ginger, sprouts and broccoli. Stirfy over a high heat for about 4 minutes or until the vegetables are cooked but still crisp. |
Step 5 2 mins | Add the soy sauce and oyster sauce to the vegetables and stir fry for 2 minutes |
Step 6 | Serve the fish with the vegetables on the side with lemon wedges for squeezing and coriander sprigs. |
