Ray’s Grilled Marinated Fish with Stir-fried Bean Sprouts and Broccoli

Lemon Juice
CorianderSet aside enough coriander for serving. With the rest of the coriander, finely slice the stalks and leaves together, this should make about 2 tablespoons of finely sliced coriander.
Chilli redRemove stem and thinly slice.
Garlic ClovesPeel and finely chop
Ground Turmeric
Tarakihi (Fillet)Cut the fillets into 8 cm pieces.
Mung Bean Sprouts
BroccoliniHalve the stems, boil for 2 minutes in a saucepan of water, and drain well.
GingerPeel the ginger and finely slice
Sauce (Soy)
Oyster Sauce
LemonsCut into wedges for serving

Method

As individual cuts may vary in shape/size, please check that they are cooked and seasoned to your liking, ahead of serving.

Step 1 3 mins Put the lemon juice, 2 tablespoons of oil, 1/2 teaspoon of salt, chopped coriander, chilli, 1/3 of the garlic and the turmeric into a small bowl and mix well. This is the marinade.
Step 2 2 mins Place the fish in a large bowl and add the marinade. Turn the fish over several times so the marinade is equally distributed.
Step 3 8 mins Heat a ridged grill pan or frying pan over moderate heat and place the pieces of fish onto the pan, side by side. Fry gently for about 4 minutes on each side, depending on the thickness of the fish, until just cooked through.
Step 4 5 mins While the fish is cooking, heat a wok over high heat and add the remaining garlic, the ginger, sprouts and broccoli. Stirfy over a high heat for about 4 minutes or until the vegetables are cooked but still crisp.
Step 5 2 mins Add the soy sauce and oyster sauce to the vegetables and stir fry for 2 minutes
Step 6 Serve the fish with the vegetables on the side with lemon wedges for squeezing and coriander sprigs.
