Ray’s Spiced Honey Chicken Thighs with Avocado Salad

Lemons | Cut a garnish wedge for each diner and with the remaining lemons finely zest half on one lemon and reserve. Carefully squeeze the juice of all the remaining lemon. Keep all components seperate. |
Parsley | Finely chop |
Lettuce (Cos) | Wash and use leaves. |
Avocado | Slice the avocado in half. Remove the stone and peel the flesh carefully from the skin and slice the avocado. |
Onion (Red) | Use half the onion and slice thinly. |
Vine Tomatoes | Cut tomatoes into wedges |
Coriander | Use just the leaves for a garnish. |
Method
As individual cuts may vary in shape/size, please check that they are cooked and seasoned to your liking, ahead of serving.
Step 1 5 mins | Preheat the oven to 200C. Put the bread into a small roasting dish and add 1 tablespoon of olive oil. Season with salt and pepper and mix well. Place in the oven for 5 minutes or until golden brown and crisp. Remove from the oven, cool and reserve, these are your croutons. |

Step 2 2 mins | Put 2 tablespoons of oil, the spice mix (cinnamon, paprika, cumin, ginger and chilli) and 1/2 teaspoon of salt, along with 1 tablespoon of lemon juice and the chilli into a mixing bowl and mix well. Add the chicken and mix until it is coated with the mixture. |
Step 3 15 mins | Heat a frying pan over a moderate heat and brown the chicken on either side. There is already oil in the mixture so don't add any more to the pan. Once browned, place the frying pan and chicken in the oven for 15 minutes or until cooked through. |
Step 4 5 mins | Remove the chicken from the oven, pour the fat from the pan, place the frying back over a moderate heat and add the honey, lemon zest, the remaining lemon juice some pepper and the parsley. Mix well so that the chicken is coated and fry until bubbling and syrupy. Remove from the heat |
Step 5 3 mins | While the chicken is cooking, put the lettuce, croutons, avocado, onion and tomatoes into a salad bowl, drizzle with a bit of olive oil and toss. |
Step 6 | Serve the chicken with this salad and a sprinkle of coriander leaves and the lemon wedges on the side. |
