Ray’s Spicy Moroccan Eggs and Beans

Red Capsicum
Onions (Brown)Peel and finely chop
CourgetteDiced into 2cm
Garlic ClovesPeel and chop or slice finely
Cumin SeedsToast the cumin seeds.
Chilli Flakes
Paprika (Smoked)
White Sugar
Tomato (Chopped)
Beans (Cannellini)
Eggs (Free Range)
Coriander

Method

As individual cuts may vary in shape/size, please check that they are cooked and seasoned to your liking, ahead of serving.

Step 1 Preheat the oven to 200C.
Step 2 20 mins Rub 1 tablespoon of the oil all over the capsicums and place them on a roasting dish. Place them in the oven for 15-20 minutes or until blistered all over.
Step 3 5 mins Remove from the oven and place in a heatproof bowl. Cover and reserve for 10 minutes. After 10 minutes, uncover. Peel the skin off and deseed the capsicums by using a small knife and scraping the skin and seeds off. then slice the capsicums and reserve.
Step 4 10 mins Heat the remaining 3 tablespoons of oil over a moderate heat in a frying pan. Add the onion, courgette, garlic, cumin seeds and chilli. Fry gently for 10 minutes or until the onion is soft.
Step 5 7 mins Add the reserved capsicums, 1 tablespoon of paprika (reserve the rest for later), sugar, tomatoes and beans in and mix well. Bring to the boil and simmer for 5 minutes.
Step 6 2 mins Taste and season with salt and ground black pepper. Once satisfied with the seasoning, pour into an oven proof dish in an even layer.
Step 7 1 mins Break the eggs side by side onto the vegetables and beans. Sprinkle whatever paprika you have left onto the eggs.
Step 8 15 mins Place the dish in the oven and bake for 15-20 minutes or until the eggs are just set.
Step 9 2 mins Remove the dish from the oven and serve, sprinkled with coriander sprigs on top
