Sirloin Steak and Cheese Burger with Chunky Potato Chips
Serves 4 people

You may notice that there are a few surplus ingredients provided, due to the number of people you have ordered for. You can choose to add these surplus ingredients to your recipe now, or save them for another meal.

Method
As individual cuts may vary in shape/size, please check that they are cooked and seasoned to your liking, ahead of serving.
Step 1 | Preheat the oven to 200C |

Step 2 5 mins | Place the potato wedges in a pot and bring to a boil for 3 minutes. Drain well, add the duck fat and flour and shake well. |
Step 3 25 mins | Spread the potato wedges out on a baking tray and roast for 25 minutes or until crispy, then remove from oven. |
Step 4 2 mins | Meanwhile: place the sirloin steaks in a bowl add a little salt and pepper and 1 tablespoon olive oil. Mix well. |
Step 5 10 mins | Heat a fry pan until very hot and add the steaks. Brown on each side, approximately 2 minutes, then place in the oven to cook for approx 4-6 minutes. Once Cooked to your liking, remove the steaks from the oven and allow to rest on a plate. Note: ( The steaks can be cooked in the oven at the same time as the wedges ) |
Step 6 5 mins | Once both the fries and steak are cooked, and removed from the oven, turn the oven to grill. |
Step 7 5 mins | Split the burger buns and place one slice of cheese on each bottom side and place on a tray. Grill until melted and remove from the oven. Cut the cooked steak in half lengthwise so you have 4 flat steaks. ( or slice into thin strips if you wish to have smaller pieces) |
Step 8 3 mins | Assemble burgers by placing lettuce on top of the melted cheese then the steak followed by another slice of cheese. Add slices of tomato on top and follow with a dollop of eggplant kasundi. |
Step 9 | To serve - Place the burgers on plates and serve the chips on the side or in a serving bowl at the table |
