Sweet Fennel Sausage Pasta Bake
Serves 6 people

Onions (Brown) | Peel and slice finely |
Sweet Fennel Sausages | Remove the skins from the sausages by squeezing the meat out in small pieces - each sausage should give you 7 small pieces |
Cauliflower | Remove any stalky pieces from the base and break into florets. |
Stock Chicken | Use half a pack |
Spinach Leaves (baby) | |
Flour Standard | |
Milk 1L | Use 1 litre for 6 diners |
Cheese (Grated) |
Method
As individual cuts may vary in shape/size, please check that they are cooked and seasoned to your liking, ahead of serving.
Step 1 | Preheat the oven to 180C. |

Step 2 15 mins | In a large saucepan of boiling water cook the pasta for 12 minutes. Drain well and set aside. |
Step 3 3 mins | Meanwhile, heat a frypan and saute the onion in olive oil for 2-3 minutes. |
Step 4 10 mins | Add the sausage pieces to the fry pan and brown. Add the cauliflower and stock and reduce the liquid by half then remove from the heat. |
Step 5 5 mins | In a second saucepan on medium heat melt the butter. Once melted add the flour and mix well. |
Step 6 5 mins | Gradually whisk in the milk and continue to whisk until the sauce has thickened. |
Step 7 | Remove this pan from the heat and stir in most of the cheese, leaving a little for the top of the bake. |
Step 8 3 mins | In a large ovenproof baking tray mix in the white sauce with the sausage mix and add the drained pasta. Stir through the spinach leaves. |
Step 9 15 mins | Flatten out so it is nice and even into a deep baking dish and top with the remaining cheese and season with salt and pepper. Bake in the oven for 15 minutes or until golden brown and bubbling at the edges. |
Step 10 | Remove from the oven and serve. |
