Tomato and Mozzarella Bruschetta

Preparation

Sourdough BaguetteCut into 10 even slices
Tomato (Cherry)Halve each tomato
BocconciniTorn into small pieces
BasilLeaves picked and stalks discarded

Method

As individual cuts may vary in shape/size, please check that they are cooked and seasoned to your liking, ahead of serving.

Step 1 Preheat oven grill.
Step 2 5 mins Place the sourdough pieces on an oven tray. Drizzle with extra-virgin olive oil and put in the oven and grill for 2 minutes, repeat on the other side and remove from the oven.
Step 3 4 mins In a bowl, mix the cherry tomatoes, bocconcini, basil leaves, salt and pepper together well.
Step 4 4 mins Top the sourdough slices with the tomato, mozzarella and basil mix.
Step 5 2 mins Drizzle with a little extra virgin olive oil and serve.
