Tomato and Mozzarella Bruschetta

Sourdough Baguette | Cut into 10 even slices |
Tomato (Cherry) | Halve each tomato |
Bocconcini | Torn into small pieces |
Basil | Leaves picked and stalks discarded |
Method
As individual cuts may vary in shape/size, please check that they are cooked and seasoned to your liking, ahead of serving.
Step 1 | Preheat oven grill. |

Step 2 5 mins | Place the sourdough pieces on an oven tray. Drizzle with extra-virgin olive oil and put in the oven and grill for 2 minutes, repeat on the other side and remove from the oven. |
Step 3 4 mins | In a bowl, mix the cherry tomatoes, bocconcini, basil leaves, salt and pepper together well. |
Step 4 4 mins | Top the sourdough slices with the tomato, mozzarella and basil mix. |
Step 5 2 mins | Drizzle with a little extra virgin olive oil and serve. |
