Ray’s Ginger Pork Spare Ribs with Steamed Rice

Garlic Cloves | Peel and chop or slice finely |

Ginger | Peel the ginger and finely slice |

Sweet Soy Sauce | |
Apples | Core the apple and dice into 2cm cubes. |
Jasmine Rice | Rinse well and then drain well. |
Lettuce (Cos) | Recipes calls for 8 leaves, rinse these well. |
Tomato (Cherry) | Slice the cherry tomatoes in half. |
Unsalted Roasted Peanuts | Crush or chop the peanuts to your liking. |
Limes | Cut the lime in half. |
Method
As individual cuts may vary in shape/size, please check that they are cooked and seasoned to your liking, ahead of serving.
Step 1 5 mins | Preheat the oven to 180C. Put the ribs, garlic, Spice Mix 1, ginger, 4 tablespoons of the soy sauce, 1 cup of hot water and the apple into a large roasting dish and mix well so that everything is evenly distributed. Season with a little salt. |

Step 2 90 mins | Place the ribs into the oven for 1 1/2 hours, turning the ribs frequently, or until the meat is very tender and easily comes off the bones. The apple will have almost dissolved and the water evaporated. |
Step 3 25 mins | Once the ribs have been cooking for 1 hour, you need to cook the rice. Place the rice into a sacuepan and add enough water to come 2cm above the level of the rice. Bring to a rolling boil and then cover. Turn the heat to the lowest setting. Cook the rice without uncovering for any reason for 20 minutes. |
Step 4 2 mins | Remove the rice from the heat and without uncovering allow it to stand for 5 minutes. Uncover the rice and gently fluff up the rice with a fork, being careful not to mash the rice grains. |
Step 5 5 mins | Remove the ribs from the oven and serve alongside the rice, with cos leaves, the cherry tomatoes and lime halves on the side and with the peanuts sprinkled over everything. Serve the remaining soy sauce on the side of the dish. |
